- 3 medium potatoes, sliced 0.5cm thick
- 3 carrots, sliced 1cm in thickness
- 2 cups frozen cut green beans
- 1 medium onion, sliced
- 1 can Bull Brand Corned Meat cut into 1cm cubes
- 1 can Rhodes Quality Tomato and OnionÂ
- 1 tsp. dried thyme
- 1 tsp. salt
- 1 tsp. pepper
- 2 medium tomatoes sliced into rounds
- 1/4 cup cheddar cheese, grated
METHOD
- Preheat the oven to 200°C.
- In a medium sized casserole dish, layer half the potatoes, carrots, green beans and onion.
- Sprinkle half the Bull Brand Corned Meat over vegetables.
- In a saucepan, add the Rhodes Quality Tomato and Onion mix
- Add the thyme, salt and pepper and allow to reduce until slightly thickened.
- Spoon over half of the tomato mixture.
- Repeat layers until the ingredients are finished.
- Top with the sliced tomatoes.
- Sprinkle with cheese; cover and bake at 200°C for 15 minutes.
- Reduce heat to 150°C; bake about 1 hour longer or until vegetables are tender.
