- 4 gem squash, cut in half and seeds removed (1 squash per person)
- 1 tbsp. oil
- 1 tsp. salt
- 300 g can Bull Brand Corned Meat – diced into 1cm cubes
- 2 medium carrots, diced
- 2 tsp crushed garlic
- 1 1/2 tbsp. tomato paste
- 1/2 tsp. black pepper
- 2 tbsp. oil
- 1/4 cup water
- 1/4 cup cheddar cheese, grated
METHOD
- Preheat the oven to 170°C.
- In a pot of boiling water, add the gem squash and cook for 10 to 15 minutes until soft. Remove from the water when soft and allow to cool before cutting in half and removing the seeds.
- Brush a little vegetable oil all over the surface of the squash and sprinkle it with salt.
- Bake the gem squash in the middle of the oven for about 10 minutes at 170°C.
- Brown the Bull Brand Corned Meat in a pan with a tbsp. oil and season with salt and pepper.
- Add the carrots, garlic, and cook until soft.
- Add the tomato paste and combine well.
- Cook for 3 minutes before adding the water and allowing the mixture to simmer together for 3 minutes.
- Take out the Gem squash from the oven.
- Stuff the squash with the mince and vegetable mixture, Top each squash with the cheddar cheese. and return to the oven for another 10 minutes.
