INGREDIENTS
- 1 Tbsp oil
- 1 onion, finely diced
- 1 Tbsp Garlic, crushed
- 1 tsp Ginger, grated
- 1 can Bull Brand Corned meat chakalaka, cubed
- 1 tsp Pakco mild curry powder
- 1 can Rhodes Quality Chopped and Peeled tomatoes
- 1 tsp Rhodes Quality tomato paste.
- Salt and Pepper
- Optional: A handful of coriander for garnish
METHOD
- In a medium pot on a medium heat. Place your onions, garlic, ginger and oil.
- Fry this off till translucent. Add your tomato paste and cook for an additional 3 mins, add 2 Tbsp of water to deglaze the pot
- Add your Bull Brand corned meat chakalaka, Pakco curry powder, Rhodes Quality chopped and peeled tomato.
- Allow this to simmer for ±30 mins.
- You should have a thick stew consistency. If it is still watery allow to cook until reduced
- Season with salt and pepper as needed
- Garnish with some chopped coriander.
- Serve with rice or a roti
